How to make a Mother’s Day Breakfast

Show your mum just how much you love her by making her a delicious breakfast in bed with one of these easy recipes. 

The main meal

Try some of these breakfast ideas that you can serve up this Sunday morning. 

Toast with a twist

What you’ll need:

  • a couple of slices of bread
  • cream cheese
  • honey
  • bananas
  • strawberries.

Pop two slices of bread in the toaster. Whilst you’re waiting, chop your banana and slice a few strawberries. Once the toast is done, spread a layer of cream cheese on each slice then decorate them with some of your chopped fruit. Top with a drizzle of honey, and you’re ready to serve.

Healthy oat pancakes

What you’ll need:

  • 100g of oats
  • 125ml of milk
  • 1 ripe banana
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 2 eggs
  • 2 tbsp chocolate chips
  • 1 tsp baking power
  • a drop of oil.

If your children are doing the cooking, you'll need to help them fry up their pancakes.

To start, mash up your banana in a bowl. Then add the rest of your ingredients and combine until it forms a pancake batter. If you’ve got a blender, simply whizz everything together (except for the chocolate chips), until smooth. Then mix in the chocolate chips.

Set the mixture aside and heat a little oil in a frying pan. Use a tablespoon to add your mixture into the pan and let it cook for a minute until bubbles appear on the top. Then, flip over and cook on the other side. Do the same with the rest of the mixture and stack it up on a plate.

If you wanted to, you could prepare some toppings by filling a few bowls with some fruit, Greek yoghurt, or peanut butter – whatever it is your mum would like.

Smoked salmon bagels   

What you’ll need:

  • bagels of choice
  • smoked salmon
  • cream cheese
  • a squeeze of lemon (optional)
  • dill (optional).

Cut your bagel in half and put it in the toaster. Once it’s toasted, spread the cream cheese on the bottom slice of your bagel. Then, add a few slices of smoked salmon on top. Add a squeeze of lemon, and a sprinkle of dill (your choice). To finish, add the top of your bagel and sandwich together.

Fruit kebabs

What you’ll need:

  • kebab skewers
  • strawberries
  • grapes
  • melon
  • blueberries
  • bananas
  • plain yoghurt
  • a handful of granola.

This one is easy and fun to make. Chop your fruit into chunks, and slot onto your skewer in whatever order you like. You can make as many skewers as you want. Serve with a small bowl of yoghurt and granola on the side to add a little something extra.

Croissants and jam

What you’ll need:

  • croissants
  • jam
  • butter (optional).

This is an easy and affordable option, with only a few ingredients involved. You can pick croissants up from any local supermarket. If you prefer, heat them in the oven for a couple of minutes (if your children are making breakfast, make sure you do this for them). When they're ready, serve with a little pot of jam and some butter on the side.

Add something to drink

To complement your breakfast add a drink on the side. You could prepare:

  • a pot of tea
  • herbal tea
  • coffee
  • fruit juice.

For tea or coffee, you can serve with a small bowl of sugar and jug of milk on the side if you wanted to.

The finishing touches

To show your Mum how truly special she is, you could bring breakfast to her in bed for a relaxing morning. Set some flowers in a vase on the side and voila – a perfect mother’s day breakfast.
